My Recipe Box: Sweet and Sour Chicken

I don't know about you all, but recipes I find on Pinterest are very hit and miss for me. I have a folder dedicated to "Pins that I've tried that were eh." Eh meaning I wouldn't make it again but it was okay for nourishment. I also have a folder called "Pinstrosity's I have Tried". Pinstrosity meaning not fit for human consumption or, in the case of crafts or other projects, didn't turn out anywhere near what it was supposed to and was just a huge mess.

And then I have a board entitled "Pintastic Pins I have Tried" and this recipe fell into that category. I have tried other Chinese-style recipes and they all fell into the other two categories. This recipe, I plan to print and put in my recipe binder.

This is how mine turned out. Pretty much perfect. Although, the rice was gross. Don't buy Teryaki Rice in a box. Blech. Best thing: it was just as easy as the original blogger said it was.


Sweet and Sour Chicken

Ingredients:
3-5 Chicken breasts
salt and pepper
1 cup cornstarch
2 eggs, beaten
1/3 cup canola oil
3/4 cup sugar
4 Tbsp ketchup
1/2 cup white distilled vinegar
1 Tbsp soy sauce
1 tsp garlic salt

Preheat oven to 350 degrees and spray a 9x13 dish with Pam. Cut chicken into 1 inch cubes. Season with salt and pepper (I actually didn't do this step because I don't like to). Heat oil in skillet. Dip chicken into cornstarch and coat all the way and then dip into eggs. Cook chicken until browned and place in 9x13 dish. In a bowl, add remaining ingredients and whisk until smooth. Pour evenly over chicken. Turn chicken so the sauce coats each side evenly. Bake for 15 minutes. Turn chicken and bake for an additional 15 minutes.

Yum!

That does look super yummy! Maybe you could cook it for us sometime :-). Of course, not until I'm done with this ridiculous diet I'm on right now. Sigh.
