My Recipe Box: Chicken Enchiladas

Russ and I love Mexican food and we are instilling that love into Chloe Jo! When we go to big town next door once a week, we love to go to our favorite Mexican restaurant for lunch. We don't hardly ever go anywhere else. I try to only make Mexican for dinner once a week, but sometimes I can squeeze another one in there and Russ won't say anything. I have a few favorite Mexican recipes and this is one of them.

Chicken Enchiladas (doesn't that look yummy!)

Ingredients:
1 lb cooked and shredded or diced chicken breast (I get the already cooked prepackaged and it works great)
1 can rotel tomatoes
1/2 cup sour cream
small warm corn tortillas (I'm going to start making mine with flour because Russ and I prefer the flour. My corn tortillas (even warmed) have been breaking on me the last few times anyway.)
1 large can of green enchilada sauce
8 oz. shredded cheese

Cook chicken in skillet (or warm in skillet if you get precooked). In a bowl, mix chicken, sour cream, and rotel tomatoes. Spoon mixture into warm tortillas and roll. Place in a greased baking dish. Top with green enchilada sauce and cheese. Bake at 375 degrees for 20 minutes until cheese is melted. Cool 5 to 10 minutes before serving.

I love serving Mexican with a can of Green Giant Mexicorn.

I don't know why, but I always thought those were more difficult to make than that. Those look FANTASTIC and I'm totally going to steal it!!

Sounds delicious! I had a thought about the corn tortillas. How are you warming them? I don't know if you're like me, but I grew up 'white' and we warmed tortillas by using the microwave. But when I met my husband (he is hispanic), he laughed at me and showed me how to heat the tortillas on the burners (only if they're gas - electric you have to use a pan) and it has made all the difference with tortilla delicious-ness. You may already know that secret, but my family sure didn't. Anywho, that's how we heat our tortillas. And your receipe sounds healthier than ours- we actually fry the tortillas for a few seconds before dipping them in enchilada sauce.

Okay, now my mouth is watering. I think I know what I will make for dinner tonight!

Mmmm! I love Chili Verde Enchiladas! I love the idea of using sour cream and tomatoes mixed in with the chicken.
We always make ours with white Corn Tortilla and in order to have them not split we heat them using our gas stovetop and then dunk then in the Verde sauce before rolling!

Lisa, that looks great, I love enchiladas! I found your comment on my blog and came to read some of yours. You said we have a "little" in common cause both our husbands are Gospel preachers. As I read your blog things sounded so much like our life! My hubby is Russ, and we met in September 2002 at Wal-Mart! How bizarre is that?!
