My Recipe Box: Chicken and Wild Rice Soup

Most of you who have been reading for a while, know that I love to cook. I try a new recipe almost every week. Since I try so many new recipes and have so many favorites, I've decided to start posting a few of the one's we really love. I won't post recipes from books for copyright reasons, but I don't see any problem posting the rest of them. So here goes:

Chicken and Wild Rice Soup
If you like chicken and rice (or chicken bog as they call it around here), then you will love this soup! I think I got this one from my Aunt Cindy.

Ingredients:
1 cup wild rice (I couldn't find just wild rice so my soup has a combination of wild and long rice)
2-3 chicken bouillon cubes (I used three)
1 whole chicken or chicken parts (I used three large chicken breasts)
2 family size cans of cream of chicken soup

Rinse rice in cold water. Drain in a sauce pan. Cook rice in 4 cups water and bouillon. Bring to a boil and cover. Reduce heat and cook for 50 to 60 minutes. While rice is cooking, have chicken boiled in large pot. Cool. Debone and set aside chicken (my chicken was deboned and skinless so after it was cool, I just tore it up with my hands). Remove 1/2 stock from pot. Set aside. Add 2 cans of soup to stock. Stir well. Cook over medium heat, adding some reserved stock for desired thickness. Drain cooked rice and add to stock and soup along with chicken. Cook for 30 minutes.

This is a somewhat time consuming recipe, but it is completely worth it! And if you're wondering, I added up the calorie total and it comes out to 158 calories per cup.

I will definitely have to try this. I love chicken bog!! We always had it in Dillon growing up and when I moved just three hours away to the other side of SC, do you know nobody here knows about chicken bog. I thought that was so crazy!

I'm thinking there is more of a chance of me making some of your family recipes than Jessica's. Just say'n. :) This looks yummy! I think I will make it!

Heather, I have a friend who lives at Myrtle Beach and she doesn't know what chicken bog is either! I have to admit, I had no idea what it was until we moved here.

We had this at Granny's house, but hers looked a lot different. It was a big hit with B!
