I rang in the new year this morning by making pancakes out of the Deliciously Deceptive cook book. These pancakes are made with a sweet potato puree.
They were seriously enjoyed by all in the family. We love sweet potatoes and I just happened to have all the stuff for these. They did not disappoint!
Yummy!
The one downside is that they are a little softer than a normal pancake. I never could get them to set like a bread and I assume it is because of the puree.
All in all, this is a great recipe and we loved eating these. I am putting this on the list of our favorites!
