Recipe: French Toast
Puree: Sweet potato
I really enjoyed this recipe. It tastes just like conventional French toast. I also added a dusting of flax seed meal to give it a little more nutritional value. I couldn't taste the sweet potato puree, though. I think it would have been nice to be able to taste it a little more. One thing that I don't like about this cookbook is that the recipes that are cooked in a skillet all use 2 tablespoons of butter. I do not cook with butter in my skillet so I haven't followed the recipes to a T. Since my skillet is nonstick, then I don't think I need the butter. It may make things taste a little better (everything is better in butter, right) but it is unnecessary to me.
