Recipe: Applesauce Muffins
Purees: Carrot puree and Applesauce
Reaction: Yum! Yum!
I made these while I was in MO and they were such a hit that I ended up making them again. My sister especially loved these and she was the one who requested it again. Even our littleset critics loved these. They are more of a banana bread consistency instead of fluffy muffin consistency, but it worked for them. The best part is the strudel topping. I think the muffins would be a little bit bland without it. I did end up putting more cinnamon in the second batch and I thought they were even better. We couldn't hardly taste the carrot in them which I honestly thought was a good thing. I will make these again and again and even serve them to guests!
